Outdoors is a different test
An indoor counter deals with knives and hot pans. An outdoor counter deals with all of that plus direct UV for hours a day, rain, and a North Texas winter that can swing from seventy degrees to a hard freeze inside of a week. Materials that are perfect in a kitchen fail badly on a patio, and one of them fails so reliably that it is worth naming up front.
Do not put engineered quartz outside. The resin that binds it breaks down under UV, the color shifts, and most manufacturers void the warranty on outdoor installs. It is the most expensive avoidable mistake in this category.
What works on a Texas patio
- Granite. The workhorse here. Natural UV stability, handles heat straight off the grill, widely available locally. Needs sealing on a schedule, and dark colors get very hot in direct sun.
- Porcelain and sintered stone. Fired at high heat, essentially non porous, excellent UV and freeze performance, and it comes in large format slabs with very thin seams. Costs more and needs a fabricator who works with it regularly.
- Concrete. Fully custom shapes and integral edges, and it fits a modern build. It is porous, so sealing is not optional, and hairline cracking is normal rather than a defect. Know that going in.
- Tile over a solid substrate. Cheapest way to get a durable surface, and easy to repair one piece. The grout is the weak point outdoors, since it stains and it is where water gets in during a freeze.
- Soapstone. Non porous, heat proof, and it does not stain. It is soft, so it scratches and patinas, which some people want and some people hate. Limited local supply.
- Avoid marble and engineered quartz. Marble etches from anything acidic and stains readily. Quartz degrades under UV. Neither belongs on a patio in this climate.
